I'm okay with any of these, for different reasons. Body & Soul or In a Mellow Tone would be great for me if I'm only concerned about something fun for myself. But for participation reasons, I think Don't Know Why or From the Start might be more popular choices and bring a younger crowd (slightly younger or much younger depending on the choice).
I don't really think of Laufey as jazz exactly, but others do, and for PIYW purposes she's close enough. From the Start is especially good for beginner jazz pianists, but all these choices have beginner-friendly options.
