In the past I used to be the same way. I used to make several versions of something and then ask folks for their opinions... and usually they would have none, or they would have an inconsistent opinion, or they would have a strong opinion and I would disagree anyway.
I decided that it was my own musical opinion and vision that mattered the most for the work I was producing. So I stopped asking pointless questions about things that probably didn't matter so much.
I put my all into the work, I make the best decisions that I can, I do a final sanity check and fix egregiously wrong choices, then I get over my insecurities and put it out there. Often I might get panned over something obvious, but I just take that as a learning for the future.
Pick your own favorite piano sound and go make some music. You will interact differently with the piano based on how it sounds, so you can certainly iterate.
Nothing else matters but the art and your personal take on it. 🙂
