I've played pianos from PianoHaus Kempf when I was in Germany. They are a great shop. I think this workshop is a good idea too. The word "wing" is a literal translation of the German word Flugel for "grand piano", so it's, among other things about the differences between grand pianos and uprights. I'm also intrigued by "how you recognize a good instrument". That could be very interesting to hear.

A wing
It's probably an automatic translation. Here in the Netherlands we call it a wing too, vleugel. It has the shape of a wing, but I don't know if that's the reason we call it a vleugel. The lid does look like a wing too.
I checked out a piano at Thomann. The automatic translation into swedish told me the piano had 88 "nycklar"
